Ingredients:
1 ¼ c chickpea flour
1 ¼ c whole-wheat flour
¼ tsp salt
1/3 c extra-virgin olive oil
4 tsp thyme, chopped
2 Tbsp sesame seeds, divided
Salt and pepper, to taste
Instructions:
- Place flours, salt, and pepper in a bowl. Bend until incorporated.
- Pour in ½ c + 3 Tbsp warm water. Add oil. Mix on medium speed for 5-7 minutes until dough becomes elastic.
- Add thyme and half sesame seeds. Mix until incorporated.
- Form dough into a ball and rub lightly with olive oil. Cover with plastic wrap to prevent from drying out. Allow to rest 30-60 min.
- Preheat oven to 4500.
- Line 2 bake pans with parchment paper.
- Divide dough into 2 pieces. Dust survace with flour and flatten until less than ¼ inch thich with rolling pin.
- Transfer rolled dough to sheet pan.
- Brush lightly with 1 Tbsp oil and sprinkle with remaining sesame seeds.
- Cut in half crosswise with a pizza cutter and separate by 1 inch.
- Cut into strips and separate. Bake 16-18 minutes until golden and crispy.
*Chickpea flour is high in protein and fiber, and is a great source of iron!
