INGREDIENTS:
- 6 large eggs
- 2 tbs. nut milk or plant based milk
- 12 sweet cherry tomatoes
- 4-5 broccoli florets
- 2 spring onions
- Pinch of salt+ cracked black pepper
REPARATION:
- Pre-heat fan-forced oven to 180°C.
- In a medium mixing bowl whisk eggs with nut milk.
- Add tomatoes, broccoli, spring onions, salt and pepper and mix to combine.
- Spoon mixture into muffin cases or a greased muffin tray.
- Bake in pre-heated oven for 20-25 minutes or until lightly golden on top.
