1 cup cooked canneli beans
2 cup Farro, cooked
¼ cup red pepper, diced
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
zest of one lemon
¼ cup freshly squeezed lemon juice
¼ cup extra-virgin olive oil
pinch sea salt


Put beans, faro, bell pepper, parsley, mint, lemon zest, lemon juice, olive oil, and salt in a large bowl. Stir until thoroughly combined.

Chill for one hour.

Option: garnish with feta cheese.
