INGREDIENTS:
- 8 large eggs
- ½ cup nut milk
- 5 spring onions
- 1 cup baby spinach
- 1 cup sweet cherry tomatoes
- 2 cup fresh flat parsley
- 1 cup fresh coriander
- 4 cloves garlic
- 3 tbs. fresh chives
- Pinch of pink salt
- Black pepper
- 4 tbs. almond meal
PREPARATION:
- Pre-heat fan-forced oven to 180°C.
- In a large bowl whisk eggs, lightly with nut milk.
- Add spring onions, spinach, tomatoes, herbs, garlic, chives, salt and pepper and mix well.
- Add almond meal and mxi to combine.
- Pour over egg mixture into a greased quiche dish.
- Bake in oven for 35-40 minutes or until egg is set.
- Serve warm or chilled.
