INGREDIENTS:

  • 8 large eggs
  • ½ cup nut milk
  • 5 spring onions
  • 1 cup baby spinach
  • 1 cup sweet cherry tomatoes
  • 2 cup fresh flat parsley
  • 1 cup fresh coriander
  • 4 cloves garlic
  • 3 tbs. fresh chives
  • Pinch of pink salt
  • Black pepper
  • 4 tbs. almond meal

PREPARATION:

  1. Pre-heat fan-forced oven to 180°C.
  2. In a large bowl whisk eggs, lightly with nut milk.
  3. Add spring onions, spinach, tomatoes, herbs, garlic, chives, salt and pepper and mix well.
  4. Add almond meal and mxi to combine.
  5. Pour over egg mixture into a greased quiche dish.
  6. Bake in oven for 35-40 minutes or until egg is set.
  7. Serve warm or chilled.
