2 tablespoons extra-virgin olive oil
1 teaspoon fresh ginger, minced
1 cup peeled and diced sweet potato
¼ cup organic stock, or water
3 cups cleaned, stemmed, chopped kale into bite-size pieces
Sea salt, to taste
2 tablespoons golden raisins
¼ teaspoon maple syrup
2 tablespoons ground pecans, for garnish
Heat olive oil in sauté pan over medium heat. Add ginger and sauté about 30 seconds. Add sweet potato, cinnamon, and broth and sauté for about 1 minute.
Add kale, salt, and raisins and sauté until kale is a darker shade of green and sweet potatoes are tender, about 5 minutes.
Stir in maple syrup. Add salt to taste.
Serve with ground pecans.
