Ingredients:
2 c old-fashioned rolled oats
¾ tsp ground cinnamon
¼ tsp Himalayan pink salt
¼ c pure maple syrup
¼ c unsalted, unsweetened smooth almond butter (or peanut butter)
1 tsp pure vanilla extract
1 egg white
1 c raisins
Instructions:
- Preheat oven to 300 degrees F. Line sheet pan with parchment paper.
- Mix oats, cinnamon, and salt together in a medium-sized bowl.
- Microwave maple syrup and almond putter in a microwave-safe bowl on high about 45 sec, until almond butter is soft enough to mix well with syrup.
- Stir in vanilla extract and mix well.
- Beat in egg white.
- Stir wet ingredients into dry ingredients.
- Spread oat mixture out evenly onto parchment paper-lined baking sheet. Bake about 20 min. Stir and bake an additional 15 min, until granola is golden brown.
- Remove from oven and stir in raisins.
- Cool before serving.
