2 c old-fashioned rolled oats
¾ tsp ground cinnamon
¼ tsp Himalayan pink salt
¼ c pure maple syrup
¼ c unsalted, unsweetened smooth almond butter (or peanut butter)
1 tsp pure vanilla extract
1 egg white
1 c raisins
Preheat oven to 300 degrees F. Line sheet pan with parchment paper.
Mix oats, cinnamon, and salt together in a medium-sized bowl.
Microwave maple syrup and almond putter in a microwave-safe bowl on high about 45 sec, until almond butter is soft enough to mix well with syrup.
Stir in vanilla extract and mix well.
Beat in egg white.
Stir wet ingredients into dry ingredients.
Spread oat mixture out evenly onto parchment paper-lined baking sheet. Bake about 20 min. Stir and bake an additional 15 min, until granola is golden brown.
