INGREDIENTS

  • 2 bananas
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1 cup white flour
  • ¼ cup unsweetened applesauce

DIRECTIONS

  1. Preheat oven to 350 degrees F. Line muffin tin with liners.
  2. In a large bowl, whisk together the flours, sugar, baking powder, baking soda, cinnamon and pumpkin pie spice.
  3. In a separate bowl, whisk the bananas, pumpkin, applesauce, eggs and vanilla until well blended.
  4. Add banana mixture to flour mixture and gently fold until combined.
  5. Divide mixture into 12 muffin cups.
  6. Bake 13-15 minutes or until toothpick comes out clean.

Makes 12 muffins.
