INGREDIENTS:

1 ½ cups almond meal
½ cup spelt flour
1 tablespoon baking powder
1/8 teaspoon sea salt
1/3 cup maple syrup
½ cup banana, mashed
¼ cup almond milk
2 organic eggs
¼ cup extra-virgin olive oil
½ teaspoon vanilla extract

PREPARATION:

Preheat oven to 350oF. Grease muffin pan.
Combine almond meal, spelt flour, baking powder, and salt in a bowl and stir with a
whisk until combined.
Separately, combine the maple syrup, mashed banana, milk, eggs, oil, almond
extract, and vanilla. Whisk until smooth.
Add the wet mixture to the dry and mix well with a rubber spatula.
Spoon the batter into the muffin cups, filling each about three-fourths full.
Bake 13-15 minutes, until muffin springs back when touched. Let cool 15 minutes.
