2 teaspoons extra virgin olive oil
4 organic eggs
pinch salt and pepper
1 teaspoon turmeric
1 tablespoon water
1 cup kale, stemmed and chopped into bite size pieces.


In a medium bowl, crack the eggs and add salt, turmeric, pepper, and water. Whisk together until mixture becomes foamy.

Heat a large skillet over medium heat. Add olive oil. When oil begins to simmer, add the egg mixture and reduce heat to medium low. Stir eggs frequently.

Once the eggs begin to form curds (after 1-2 min), add greens. Continue to stir until eggs become shiny.

Serve immediately.
