Ingredients:
2 tablespoons orange juice
2 teaspoons lemon juice
2 teaspoons extra virgin olive oil
1/3 teaspoon fresh ginger
pinch salt
1 cup peeled, shredded carrot
1 cup peeled, shredded red beet
2 tablespoons chopped fresh mint
Preparation:
Whist orange juice, lemon juice, olive oil, ginger, salt together until combined. Put carrots into a large bowl and drizzle with half the dressing. Toss until evenly coated.
Put beets into the mixing bowl and drizzle with remaining dressing.
Toss until evenly coated.
