Sweet Potato Fries and Aioli


For the Fries:
2 sweet potatoes, peeped and cut into long batons
1 Tbsp avocado oil
2 tsp chopped rosemary
Salt and Pepper, to taste

For Aioli:
¼ c avocado oil mayonnaise
1 Tbsp plain Greek yogurt
1 tsp lime juice
1/8 tsp curry powder
1/8 tsp garlic powder


  1. Preheat oven to 450 degrees F. Line two large sheet pans with parchment paper.
  2. Toss sweet potatoes in oil, rosemary, pepper, and salt. Spread into a think layer on the sheet pans. Bake until golden, about 30 min. Rotate occasionally.
  3. To make Aioli, stir together mayonnaise, yogurt, lime juice, curry powder, and garlic powder in a small bowl.
  4. Serve fries and aioli together.
